Bourbon Cask
With a slightly higher proportion of whisky from the Southern Islay distillery (57%), this blend carries a bold, smoky foundation, beautifully balanced by the lighter, more refined character of the Northern distillery. First-fill bourbon casks bring forward rich sweetness, while refill casks gently soften that intensity - creating a whisky that is both bold yet perfectly balanced.
To capture the fullest influence of bourbon casks, they go to great lengths to source unrinsed barrels- often from smaller producers who simply empty their casks rather than washing them, as is industry standard in recent years. This bourbon-soaked wood imparts maximum depth and character to our Bourbon Cask expression.
Sherry Cask
The Sherry Cask release is a bold, intense expression with a pronounced sherry influence. Through longstanding partnerships with renowned cooperages and bodegas such as José y Miguel Martín, the casks are seasoned with carefully chosen sherry wines to maximise the casks’ sherry influence before filling with whisky.
With 78% of the blend drawn from the Southern distillery, its heavier peat smoke pairs seamlessly with the richness of first-fill sherry casks. Oloroso butts bring layers of sweetness and spice, whilst a small percentage of sherry hogsheads adds depth with robust favours of wood spice.
Cask Edit
Cask Edit is a blend of two Islay single malts, one from the North and the other from the South. They ‘edit’ these together — hence the name — to become greater than the sum of their parts. While the breakdown appears near 50/50 (49% North, 51% South), the result is far more nuanced. Blending isn’t easy — it takes craftmanship.
They start with the fruity, mineral character of the North, then add the richer, smokier South, matured in varied casks for depth and balance. Refill bourbon barrels bring sweetness and lift peat’s intensity, while sherry butts add dark fruit and spice to enrich the vanilla of first-fill wood. Sherry hogsheads, used sparingly, encourage slower maturation and add subtle spice and bitterness — like bitters that lengthen the finish. At 46% ABV, Cask Edit is an all-rounder, great for sipping or mixing.
